<b>OUR BELOVED WHOLE FOODS STORES ARE DECEIVING US! </b></h2>

Whole Foods, a place where probably many of us shop has (very quietly) admitted in a press release (found on their website) that they sell organic GMO food that IS NOT LABELED. I find this appalling. Like many people, I go into Whole Foods thinking, I am buying WHOLE FOOD since they advertise "100% real ingredients" and "Nothing Artificial Ever". 100% real ingredients and GMO are, in my opinion, COMPLETE opposites and not synonymous what-so-ever!<br />
<br />
GMO - Genetically Modified Organisms, in a nutshell, is where scientists go in and genetically alter the chemistry of a fruit or veggie. Thus, the final product is not the truest form of itself anymore. After testing these altered products on mice etc. (which is a whole other crappy subject), the mice and rats became very sick with tumors and various forms of cancer.<br />
<br />
Now, places we trust, like Whole Foods, is sticking GMO products onto their shelves without telling us. Many items are NOT labeled at ALL. This country is already riddled with disease, and now there is a pathway for those of us who want to stay healthy to get sick or sicker. <br />

Infowars.com - has a FABULOUS documentary on this subject, where they travel to Whole Foods and ask the customers if they know what Whole Foods is doing. It also goes into depth about the press release and how our Food Czar of this country supports GMO products and confronts Whole Foods themselves, who then tries to dance around the situation. Please take 20 minutes to watch this video to get educated.<br />

<li>Go
get yourself a small-medium sized spaghetti squash (ours is a
medium-large size in the picture) if you are making a meal for 2.
Bigger if you are making for more. Give it a good wash (you don't use
the skin anyways)</li>
<li>Get your best knife out to cut it LENGTHWISE in
half. The cutting I found was the most challenging, especially if it is
under ripe. I found the easiest way to cut it is if you hold the stem
area and then cut the bottom half all the way through to the other side
(so you kind of made a mouth on it). This way you can stick the back of
a spoon in the slice you made for leverage to cut through the rest.
Don't be afraid to just rip apart when you have the whole thing almost
cut (you get all the meat out of it later, so style and presentation
points don't count here). </li>
<li>Once you have that bad boy in half, discard
the middle slimy, seedy part and lay the 2 halves out on a cookie sheet.
**Depending on your oven, you may want to add water to the bottom of the
cookie sheet, an inch or less, so it doesn't dry out. </li>
<li>Dab a little olive oil on it. </li>
<li>Put the squash
into the oven for about 30-45 minutes. You can tell when it's finished
when you can stick a fork in the meat of it easily or it's getting a
little wilty.</li>

<b>The Fun Part:</b> <br />
Next
is the fun part! After the oven, grab a potholder with one hand and
stand one half of it upright. Take a fork in the other hand and just
drag it from top to bottom of the meaty part of the squash. It's VERY
easy, and it literally just falls apart with your fork. Takes about 2
minutes.<br />

Super Easy, Fast, Friendly Cheesy Kale Chips!</h2>
OK, if you're like me, you LOVE LOVE LOVE you some chips! I used to love a big ol<br />
bag of fresh potato chips once upon a time. But alas, I know better, so I found a way to replace them.<br />
<br />
After much experimenting, we found a kick-ass way to make "chips" really fast and delicious!<br />
<br />Here's what you'll need:<br />
<br />
<ul>
<li>1 bunch kale (organic) washed and dried well</li>
<li>3 tbs nutritional yeast</li>
<li>1 squirt lemon</li>
<li>1 1/2 cups raw cashews (you can pre-soak for an hour or 2 or not)</li>
<li>1 red bell pepper (small)</li>
<li>salt</li>
<li>pepper</li>
<li>olive oil </li>
<li>water</li>
<li>appetite</li>
<li>Pre-heat oven to 405-425 depending on your oven</li>
<li>cookie sheet with foil, silpat whatever you have </li>
<li> Vitamix/good blender</li>
</ul>
<b>Preparing the Kale: </b><br />
You will want to wash and get them DRY. I just rip them where they contour, to make small chip size pieces and put them in a large bowl. You can be a little more professional than me and use a knife to make clean cuts. Make sure not to use the middle rib and that you are just ripping off the leaves. Save the middle rib for your juice or smoothie later! Add a swirl of olive oil to the kale and get your hand in there to start tossing! (I can usually get 2 bowl of kale chips out of one thing of kale - don't over flow your bowl save half for the next batch)<br />
<br />
<b>Preparing the Cheesy Saucey deliciousness:</b><br />
I use a Vitamix, I am not sure a regular blender will get you the right consistency for this sauce... In your blender ad cashews, red pepper (without stem or seeds), nutritional protein and lemon. I like to add a splash of water so everything gets blended up smooth.<br />

Now taste it!!!!!! Sometimes I end up adding up to 6 tbs of nutritional protein depending on my batch of cashews. The more NP you put in the "cheesier" it tastes. <br />
<br />
<b>Making the chips:</b><br />
Pour HALF of the cheese sauce you made into the bowl with the kale. I enjoy tossing it with my hands to coat all the pieces. You want a light to moderate coat so the don't get to soggy.<br />

On your cookie sheet, use foil - or I highly recommend a Silpat if you have one. Spread the chips evenly out over the sheet trying not to over lap too much.<br />

After you have put them on your sheet, add salt and pepper to taste.<br />
<br />
Stick that guy in the oven for a bout 15-20 minutes, depending on your oven and start working or your second half. You will know when they are finished because the will shrink and turn a little darker. I like mine with crispy edges and a little bit of a chewy middle. You can also use a dehydrator if you are not in a time crunch.<br />

Aloe is beyond amazing for you. It does so much. It is super powerful with super powers! I have 2 oz. of aloe every morning when I wake up before I eat or drink anything and I feel great all day. Since the Vitamixes cost as much as it would to get a new laptop, we opted to try the Ninja. And boy are we happy!!<br />

First off, we got a killer deal. It took me 2 hours to research, but in the end we paid about $75 for it. I purchased it from Kohl's, who at the time was running a sale $179.99 for the 1200 watt Ninja. I also had a 20% off coupon. Additionally, they were running a $15 Kohl's cash back for every $50 spent (I added on a nerf toy for our friend's kid to get back to $150). I then ordered online through eBates.com - which was giving 6% back on all purchases on Kohl's. And then lastly, in the paper that week there was a $20 rebate coupon in the coupon section. When it was all finished (and you subtract all the money and coupons) we paid right around $75. SWEET!<br />

Performance-wise, this machine is a breeeeeeeeeeeeeeeeze. It came with 2 different sized pitchers, which was great when only one of us was making a smoothie. Our smoothie test consisted of fresh picked spinach, banana, frozen mango and strawberries and fresh blueberries. A little water and almond milk too. (Oh and a some of my herbal potions we droppered in). I was surprised at how well it blended everything. I was worried about the spinach coming out leafy in the drink, but it ended up being a super thick creamy green smoothie with ZERO chunks of anything! So, that's hat we got it for, and it did it. This mix was absolutely fantastic. It didn't need dressing with the mixture of flavors (especially the pears and cranberry making it sweet), but I did add a bit of balsamic vinegar to it. I also put a little garlic powder on top which gave it one more nudge.<br />

I cut up enough stuff the first time around to be able to make 3 more of these salads for 2 of us, which reeeeeeeeeeeeally saved me some time. I felt really great after I ate it too! Helps to have more energy on such a busy schedule!<br />

Notice I omitted the oil and sugar and it still tasted awesome. I left it in for those who still enjoy those ingredients.<br />

A spinach pesto was generously spread on a very light, crispy focaccia bread with Greek olives, dill, roasted pepper and onions. it came with a tasty side salad that had tiny slivers of celery, grape tomatoes, onion, dill and yellow peppers. Loved, loved, loved this dish. Tommy's was just as delightful. He had a curried monster burrito with beans, sweet potatoes, muchi curry and avocado. Super tasty. We would have done dishes for seconds. And then scrubbed the toilets for thirds. No. Seriously.<br />

Since becoming vegan, we've tackled the challenge of making a vegan pizza TASTE GOOD. There is no dairy, no oils, no meats. Hooray!<br />

<span style="font-size: large;"><b>SUPER GARLICY GOOD PIZZA </b></span><br />
<span style="font-size: large;"><b>Getting Started:</b></span><br />
1.First, go get yourself a pizza stone. They go for about $10, and we use it once a week. It is VERY handy.<br />
2. Second, go get some cornmeal. This is a lifesaver. By spreading it under your dough, you save yourself the trouble of peeling chunks of your pizza off the stone to eat it. <br />
3. You will need dough. Go ahead and get the pre-made dough. We found sprouted whole wheat grain dough that was fantastic. (Go for the wheat over the white).<br />
4. Preheat your oven to 375.<br />
5. Have 3 cloves cut garlic ready, handful of basil, your favorite or homemade tomato sauce, vegan cheese, oregano, garlic powder, onion powder and toppings you love (mushrooms, onions).<br />

<b><span style="font-size: large;">Working the Dough:</span></b><br />

Slap a good amount of the corn meal to cover the pizza stone. Grab your refrigerated dough (make sure you keep it in the fridge before use, it makes it much easier to work with) and before you place it on the pizza stone work it with your hands into a circle. Pull it a little and spin it and you will see it work itself out nicely. Once you've pulled it to about twice the size it came, go ahead and drop it down onto your pizza stone. Wiggle it around so the bottom coats with corn meal. Gently push and pull the dough towards the outside of the stone, keeping a uniform thickness. We like to fold up the edges for a good crusty bite. <br />
After you have played with the dough to make it fit your pizza stone take the 3 cloves of carlic you finely chopped and spread it like paste all over the dough. Add your oregano, a little garlic power and onion powder - to taste. (We put a little vegan cheese on our crust above).<br />

Now you are going to go ahead and stick it into the oven! Yes, into the oven before you put anything else on. Put it in for about 15 minutes or until the crust is just starting to firm up and you can "tap" it without making an indent.<br />

I know it's tempting, but don't eat it yet. When you pull it out of the oven it will smell so good! It's now time to start adding the rest of your ingredients. Boost your oven up to 405 while we do the next step.<br />

With a spoon take your tomato sauce and swirl it around to cover your dough. Add as much as you like, we add a lot because Tommy loves sauce. AND since we pre-cooked our dough, the center doesn't get as soggy, if at all!<br />

Now for some vegan cheese and fresh basil from our backyard. And folks, I highly recommend growing your own basil. It's not only awesome for pizza but we've used it for so many other things. Plus it grows like crazy too, so you'll always have some. <br />

Time to stick that pizza back into your 405 degree oven for another 15-20 minutes. Depending on your toppings you may need more or less time. You'll know when it's brown and the crust is pretty hard to touch.<br />

Bigger if you are making for more. Give it a good wash (you don't use the skin anyways) and get your best knife out to cut it LENGTHWISE in half. The cutting I found was the most challenging, especially if it is under ripe. I found the easiest way to cut it is if you hold the stem area and then cut the bottom half all the way through to the other side (so you kind of made a mouth on it). This way you can stick the back of a spoon in the slice you made for leverage to cut through the rest. Don't be afraid to just rip apart when you have the whole thing almost cut (you get all the meat out of it later, so style and presentation points don't count here). Once you have that bad boy in half, discard the middle slimy, seedy part and lay it out on a cookie sheet. **Depending on your oven, you may want to add water to the bottom of the cookie sheet, an inch or less, so it doesn't dry out. Put the squash into the oven for about 30-45 minutes. You can tell when it's finished when you can stick a fork in the meat of it easily or it's getting a little wilty.<br />

Next is the fun part! After the oven, grab a potholder with one hand and stand one half of it upright. Take a fork in the other hand and just drag it from top to bottom of the meaty part of the squash. It's VERY easy, and it literally just falls apart with your fork. Takes about 2 minutes.<br />

Since Tommy and I have been doing this new lifestyle, people are seeing our results and wondering how they too can do what we did. And it's funny how this blog and everything related kind of accidentally happened. Once we started juicing, everyone notices the change in us and began asking questions upon questions and we became almost like a walking billboard for <b>HEY I'M JUICING VEGGIES</b>! I mean, everywhere we went, people stopped us and talked about it. Even our hockey locker room discussions, which were usually sarcastic and perverted, were all about vegetables and the like. <b>What the heck is Juicing?</b><br>
Juicing is the art of taking fruits and vegetables and extracting the juices by putting them through a juicing machine. Not to be confused with blending (like you here with a vitamix), as blending you are eating the whole fruit or veggie, pulp and all. Juicing extracts all the juice from any fruit or veggie (except a banana - tried that a FAILED miserably).<br>

We geared up at 7am, loading water, bananas and raw Spirulina bars in our backpack. Of which I would like to mention, we got Columbia's backpack of the year (2 of them) at the Columbia Outlet for $30 a piece. SUPER DEAL. They are lightweight, bright colored, compactable tons of pockets and compartments - that all make sense with outdoor activity. Even a handy water bottle holder at hands reach and a pocket inside to put a water bladder with hose. Awesome. But anyways...<br>

We hiked 2 miles near Phoenix, AZ on a pretty easy to moderate trail of hills and paths. The fresh air was incredible and it was nice to have a good sweat. MAKE TIME TO TRY AND HIKE! Seriously folks. There are tons of benefits of a good hike not to mention getting some sun and oxygen through your system. We felt amazing after this hike and it only took us and hour and a half (with some water and picture breaks). You will feel so good afterwards, it will inspire you to get up early and do it again the next week!<br>
